I'm Mirriam, and I came to America with my family in the early 1970's. I grew up eating Afghan food and always took it for granted until I had a home and family of my own and mom wasn't around to make all the dishes that I loved growing up. So, I learned to make this food myself. I took lessons from my mother, grandmothers, aunts, cousins and from the very few books that are available on our cuisine. Afghanistan is more than just war. Ask them why they weren’t fasting! 1.5 cups lukewarm water 1 tablespoon yeast 1 teaspoon sugar 3.5 cups flour 1 teaspoon salt Semolina or breadcrumbs For topping 2 tablespoons melted butter 1/4 cup water 2 egg yolks Nigella seeds Sesame seeds Mix the water, salt and sugar together in a small bowl or measuring cup. Set aside. Once it becomes foamy add to the flour. Add the salt and stir until well combined. Knead for about 10 minutes until the dough is soft and elastic. Cover and let rise for one hour. Preheat your oven to 500. If you have baking stones place those as well. Mix the yolks and water together until well combined then add the melted butter. Add some semolina or breadcrumbs onto a piece of parchment paper big enough to hold the pide. Watch the video for how the pide is shaped and designed. Once the pide is shaped, brush it well with the topping and sprinkle the nigella and sesame seeds. Drain the water and remove the panda and set the potato aside. In another pot, combine the coconut milk, palm sugar, panda leaf and a pinch of salt. Gently boil the mixture and stir until all the sugar is dissolved. Add the palm fruits and continue to stir and cook about 5 minutes. Add the banana pieces and sweet potatoes and cook until the bananas start to soften. Remove pandas leaves before you serve. Boil water in a large saucepan then add the onion mixture to it along with the bruised lemongrass and the whole spices. Let the water come to a boil and cook this for five minutes. Put the shrimp into a food processor and pulse until it becomes very fine Add rice and meat to the onion/water mix. Stir, reduce the heat and add the ground spices. Let it all cook on low heat for 20-30 min, stir often. Add water if it gets too thick. After the rice is broken down and the porridge is mostly smooth, add the coconut milk and dried shrimp, let it come back to a simmer. Today, Sholeh Zard from Iran. Ingredients Jasmine rice 1 cup 6 cups boiling water 2 cups granulated sugar 2⅓ cups extra boiling water (to be added later) ¼ cup rosewater ¼ tsp ground saffron GARNISH: Ground cinnamon Slivered or chopped unsalted pistachio nuts Dried rose petals Steps: Rinse the rice thoroughly until the water runs clear. Drain all the water. Bring the 6 cups of water to a boil and add the rice. Stir and Bring back to a boil. Reduce heat and Simmer with a low boil without covering the pan. Stir occasionally to prevent it from sticking. After a few minutes, let it cook on simmer Do Not Stir for 1 hour 15 minutes. Most of the water will be cooked off and the rice should be completely tender. Add 2⅓ cups boiling water, 2 cups sugar, ¼ cup rosewater, and ¼ tsp saffron. Increase the heat to med low and bring it to a boil. Continue cooking on medium low for 5 more minutes, or until Sholeh Zard thickens. Use a wooden spoon to stir several times so the Sholeh Zard does not stick to the bottom or sides of the pan. Remove from the heat. You can pour the sholeh into individually cups but I put mine in one bowl. Cover it tightly with plastic wrap to prevent a film from developing. Refrigerate for 1-2 hours until completely chilled. Garnish with ground cinnamon, slivered pistachios or almonds if you’d like. I added dried rose petals in a pretty design. Drain and set aside. Toast the pine nuts until lightly brown and fragrant. Set aside. Heat the chickpeas with their liquid. You may need to add more water to cover the chickpeas completely. Let them warm through while you make your yogurt sauce. Mix the garlic cloves and the salt, this helps to release more of the garlic flavor. Add the yogurt to this mixture, along with the lemon and tahini. Stir well. Add the chickpeas but do not add the water. If the yogurt is too thick, add a tablespoon or two of the chickpea water to thin it a bit. Assemble the fatteh - put the bread on a platter, pour the yogurt over it then sprinkle with pine nuts. Once the fatteh is assembled, make your browned butter. Heat the butter in a small pot on medium low heat until it foams and turns golden brown. Stir well to ensure the dried spices do not clump up. Cook until the spices are cooked and the tomatoes begin to soften, about 4 minutes. Add the deseeded and diced jalapeños to the skillet. Cook until softened, about 3 minutes. Add the mashed fava beans and salt to taste. Mix well by mashing the beans and incorporating them into the sauce. Cook for 3 minutes, stirring continuously, just to warm everything through and combine the flavors. After I made this batch, I made another, smaller batch of sugar syrup because the rest of my family likes their drinks much sweeter. This is a great way to use up the left over mint in your garden. Sugar syrup 3/4 cup sugar 1 cup water Boil together until all the sugar is melted and the syrup just starts to thicken. Let it sit in the fridge until it’s time to add it to the drink. 48 ounces of ice cold water 20 mint leaves The juice of 4 lemons or 1/2 cup of lemon juice (more if you want it to be tarter) Put all of the ingredients (including the sugar syrup) into a blender and let it do its magic. If you want this to go faster and dirty more equipment, you can put the mint into a food processor in order to break it up easier because in a blender it will take a little while. Blend it until there are only microscopic bits of mint remaining. Add ice to your glasses and if you want, strain out as much of the mint as you can. Drink it up and stay hydrated. Cook for five minutes. Add the meat and cook until the meat is brown, about 5-7 minutes. Add the parsley, salt, pepper and cinnamon and cook one minute, continue to stir. Break the eggs into the pan over the meat and stir to scramble the eggs. Make sure the eggs are distributed throughout the mixture. Lay out one sheet of wrapper. Place 2 tablespoons of the filling in the lower portion of the sheet. Add half a wedge of the laughing cow cheese and a teaspoon of puck cheese over the meat. Fold according to video. Use the egg wash to seal the edges. Set on a baking sheet until all of the meat mixture is used. Heat the oil until it reaches 350 degrees.
