Make the brown sugar invert syrup by combining the sugar, water and citric acid, simmer for 20 minutes, then cool to room temp. 2. Add the cooled brown sugar syrup to the peach juice, crushed peaches with the skins on and stones removed, yeast nutrient, pectic enzyme and yeast. 3. Ferment until you reach a gravity of 1.000 or lower, then strain and let the wort clear for a few days before using. For the Grain Mash: 1. Crush the grain and add to water that is at 152F (66.7C), stir and hold temp at 145F (62.7C) for 1 hour. 2. Strain out the grain and cool the wort to room temp. 3. Ferment until you reach a gravity of 1.000 or lower. Theoretically, you can combine the two fermented washes and distill separately, then blend. If you have a thumper, you can add fresh peaches to it to boost the flavor. Scale up as necessary for your desired volume. Use a recipe calculator like Brewer’s Friend to get the measurements right. 1. Bring 2.5 gallons of water up to 165F, then dough in your crushed grain. 2. Mash at 154F (67.8C) for 1 hour, then sparge with 2 quarts of hot water. 3. Boil for 1 hour adding your hops in the schedule indicated. 4. Cool the wort to pitching temp and pitch yeast. Ferment for 1 week at 65F, then transfer to secondary fermentation vessel. 5. Secondary Fermentation – Transfer beer to a BadMotivator barrel presoaked with bourbon, or add bourbon-soaked oak staves to clean fermenter and transfer beer into that. Add split vanilla beans and cocoa powder or cacao nibs to secondary vessel and allow it to sit for 1 week. 6. Transfer to keg or bottle. If bottling, allow the bottles to condition for at least 2 to 4 weeks. Distillation style: Double distillation with a stripping run and spirit run. Bearded’s Funky Panela Rum 25kg (55lbs) panela sugar - https://amzn.to/3I43a19 27 gallons of water 2-3 whole pineapples – Use the skins only, eat the fruit. Yeast nutrient – optional - https://amzn.to/3OOcYA3 DADY yeast - https://amzn.to/3T34qYQ Old rum dunder/muck – add 1-2 liters per boiler run for the stripping runs 1. Dissolve the sugar in water, cool to 80F, then add the pineapple skins and yeast nutrient and allow it to ferment for at least 1 week. Check the gravity. If it has not finished down to 1.000, add DADY and give it another week to finish fermenting. Add yeast nutrients if sluggish after 24 hours. 2. If you have some funky rum dunder/muck, add 1-2 liters per 40L of wash to the boiler for each stripping run to boost esterification. Collect all low wines. 3. Spirit run low and slow. Proof down to 55% and age in a BadMotivator barrel for 1-3 years.
