Combine the dry ingredients (flour, salt, baking soda, cinnamon, ginger and cloves) and mix with the wet ingredients on low speed until there are no streaks. Cover and refrigerate the dough for one hour and preheat your oven to 350 degrees. Remove the dough and roll into 36 balls, baking each dozen for 10-11 minutes. Preheat oven to 350 F 2. Cream together butter + sugars until smooth. Add egg, vanilla, peppermint and combine. 3. Stir in flour, cornstarch, baking soda + salt. 4. Stir in chocolate chips. 5. Roll + place on a prepared baking sheet. Bake for 10-12 minutes until edges are golden brown - don’t overbake (they will still look fluffy in the oven - this is the goal! Don’t leave in too long).
