Oil the bottoms of two 8-inch OR two 9-inch round cake pans and line the bottoms with parchment paper. Combine the flour, baking soda, salt, and cinnamon; set aside. Combine eggs, oil, buttermilk, sugar, and vanilla; beat until smooth. Stir in the flour mixture, pineapple, carrots, coconut, and nuts. Evenly divide batter into prepared cake pans.  Bake for 35 to 40 minutes or until the center tests done. Let cool 15 minutes, then drizzle with the buttermilk glaze slowly until it is all absorbed. Let the cakes cool completely before removing from cake pans. Make the buttermilk glaze by combining the sugar, baking soda, buttermilk, butter, and corn syrup in a large saucepan. Bring to a boil; cook four minutes, stirring often. Remove from heat and stir in the vanilla. Slowly drizzle over the cakes and allow the glaze to soak in. Make the orange cream cheese frosting by combining the butter and cream cheese in a mixing bowl. Beat until light and fluffy. Add the next four ingredients and beat into the frosting is smooth and creamy. Use this to frost between the layers, the top, and the sides of the cake. Place a layer of tortilla to cover the bottom of the dish. You will need to tear or cut to cover the corners and the edges. But there is no need to go up the sides of the baking pan. Spread a layer of 1/3 of the sausage, then a layer of 1/3 of the crumbled scrambled eggs over the sausage.  Spread a thin layer of salsa over the eggs. Be careful that you don’t add too much salsa because you do not want the casserole too wet. Spread a thin layer of cheese over the salsa. Repeat those steps to create a second and third layer of the breakfast lasagna casserole. On the top layer, make sure everything is covered in salsa and covered with a nice amount of cheese. At this point, you may cover the casserole and place into your refrigerator overnight to be baked in the morning. If you choose to do this, set the casserole out 30 minutes to one hour prior to baking the next day. Bake the casserole in a preheated 350° oven for 30 to 40 minutes or until the casserole is heated throughout and the cheese is bubbly. If the casserole has not reached room temperature after being refrigerated, it may take up to an hour to heat through. Description: Pralines 1 cup sugar 1 cup packed light brown sugar Pinch of salt 5 ounce can evaporated milk 1/2 stick butter, room temperature 2 teaspoons vanilla 1 1/2 cups pecans, coarsely chopped Put a long piece of parchment paper out on your countertop before you begin making the candy.  In a large, heavy bottomed saucepan, stir together the sugar, light brown sugar, salt, and evaporated milk. Bring to a boil over medium heat. Boil for exactly 4 minutes, stirring often. (Start timing the four minutes when the mixture is at rolling boil.) After four minutes, remove from the heat and immediately stir in the butter, vanilla, and pecans. Using a heavy spoon, quickly stir the mixture for 50 to 100 strokes, just until the mixture begins to slightly thicken. Quickly spoon out your pralines onto your parchment paper. Melt the butter on low in a 6 - 8 quart stainless steel pot then stir in the other ingredients one at a time, EXCEPT for the vanilla. Once all the ingredients are in and blended well, turn the heat up to medium. Gently, and nonstop, stir the caramel for 30 to 40 minutes until it reaches 243° to 245° on a candy thermometer. Remove the caramel from the heat and stir in the 2 teaspoons of vanilla. Stir well. Pour into the buttered dish. Allow to set overnight. Cut the caramel into long strips on a glass cutting board and cut into small squares. Wrap each square in a cellophane wrapper and twist each end tightly. Make the frosting by creaming together the powdered sugar, butter, cream cheese. Beat in the vanilla and milk. Spread the frosting over the cookie bar and top with additional sprinkles.
