Serve with your choice of swallow (fufu) or starch This recipe serves about 3-4 people. Feel free to add, remove, or customize the measurements, cooking time, and seasonings to accommodate your desired portion. The cooking process remains the same. Ingredients ——————— - ground melon seeds (egusi) (blended into a thick paste) - 6 oz chopped spinach - meat, fish, or chicken of choice (i used beef and smoked fish) - meat stock - 1/2 cup palm oil - 4 tbs cooking oil (just enough to sear the meat) Pepper mixture (blended into a smooth paste) - 2 roma tomatoes (the small ones) - 1 leek stem ( just one of the leaves) - 1 medium red onion (1/2 chopped, 1/2 blended) - 4 garlic gloves - small thumb of ginger - 2 1/2 red sweet peppers (bell peppers) Meat seasoning: - 1/2 tbsp garlic powder or to taste - 1/2 tbsp onion powder or to taste - 1/2 tsp ginger powder or to taste - 1/4 tbsp white pepper or to taste - 1/2 tsp black pepper or to taste - 1 tsp chicken bouillon or to taste - salt to taste Procedure  ——————- - Add enough water to cover your meat and add in your seasonings. Cover and cook meat over medium heat until thoroughly cooked. Then remove cooked meat and save the stock. - In another pan, heat cooking oil over medium-high heat. Once oil is heated, add in your cooked meat and sear 3-5 minutes on both sides or until brown. (We are just doing this to get some color on it) Once meat is browned, remove from the heat and set aside. - In a cooking pot , add in the palm oil and allow oil to heat up. While heating the red oil will start to turn pale or yellow in color. This is okay. Be mindful that heating palm oil on high heat will cause smoke , so do be watchful and careful. - Once the palm oil has turned a pale yellow color. It is now ready for your blended pepper mix. Add in the blended mix slowly or in batches because the oil will be hot and can splash. Move back! (You can choose to add in 1/2 of your chopped onion first and fry until translucent before adding in the pepper mix. I added my chopped onion to the egusi paste because i fried the pepper mix first. *whoops!* but personally i dont think it matters the order in which you fry them . They all will still end up in the same soup! ) - Reduce heat to medium- low and Fry pepper mix for approximately 10 minutes, stirring occasionally. - Afterward add in your blended egusi paste. You can pour it in at once and stir for a smooth consistency or you can add it in lumps as i did in the video. (Adding it in lumps will give it a more clumpy texture when broken down). - Cook egusi for approximately 10 minutes on Low-Medium heat. Cooking it on high heat will cause it to burn. After 10 minutes (if you added it in lumps like i did) start to break apart the lumps for a more even texture. ( if you added it all at once, then just stir occasionally while cooking within those 10 minutes. -Once the egusi has been broken down, add in your cooked meats, the meat stock, and a bit of water. Stir well to combine. Since the stock had seasoning, its best to taste the egusi and adjust the seasoning if needed. (salt and bouillon to taste) Its best to season abit at a time and adjust as you go rather than adding it all at once and not being able to take it back. Cover and cook the egusi an additional 10 minutes on LOW-MEDIUM HEAT. - Then add in your chopped spinach and stir well to combine. Taste the soup and adjust seasoning if necessary. Cook an additional 5 minutes and then remove from heat. - Serve with your choice of swallow (fufu) or starch. Ingredients —————————— - Bread of choice (recommended: French baguette) - 1-2 bulbs of garlic (depending on how potent you want the garlic flavor, you can also use garlic powder as a substitute) - 2 sticks of softened unsalted butter - 1/4 cup chopped Italian parsley -1/4 cup parmesean cheese (as a salt substitute, you can add a pinch of salt to taste if needed/preferred. Omit if you are using salted butter.) - 1 tbs cooking oil of your choice (I used Olive oil) - 1/2 tsp ground black pepper - 1 tsp crushed red pepper (omit if you dont want any spice) - cheese of choice ( i used a mix of mozzarella, and mild cheddar cheese) Procedure ————————- - In foil (or oven safe dish) add bulb of garlic or cloves and add 1 tbsp of olive oil, a pinch of salt, and black pepper. Wrap/cover tightly and bake in the oven for 10-15 minutes or until softened. Then remove the roasted garlic and mash into a paste (so it easily combines with the butter.) - In a bowl, combine softened butter , chopped parsley, mashed roasted garlic, crushed red pepper , and parmesan cheese until thoroughly combined. - Cut your preferred loaf in half and generously spread butter mixture on your bread thoroughly covering it. - Bake in the oven at 400 degrees for about 10 minutes until lightly crisp and golden and the butter has melted. - Remove from the oven and then top with your cheese and bake again at 400 degrees for about 5 minutes or until the cheese has melted. (Do not over bake or leave unattended. Check in on it periodically to ensure your bread doesn’t burn up) - Remove from oven and top with more chopped parsley and grated cheese (optional) and enjoy on its own , with your favorite sauce, or with a meal. This will help your seasonings to adhere better to the chicken - Add in the seasoning mix. - Mix thoroughly, ensuring the wings are well coated with the seasonings - Cover and allow to marinate at room temperature for 15 minutes. If you wish to marinate for longer, place in the fridge. - Place marinated wings on a greased baking sheet and bake at 365degrees fahrenheit for 30-35minutes. You can also choose to air fry the wings or deep fry in oil for more crispy wings. - Once chicken is thoroughly cooked , over medium low heat, melt 3 tbs of unsalted butter in a pan. - Add 1 tsp chilli powder and 1 tsp red pepper flakes and mix well to combine for 1 minute. ( You can customize the ratio depending on how spicy you like your wings) - Add 1 tbs honey to the mix and stir to combine for 30-40 seconds. Reduce heat to low - Add in the juice of 1 lime (you can also add the zest for a more intense lime flavor) and mix to combine 1 minute. - Add in the cooked wings and toss them in the sauce thoroughly coating. - Plate and garnish with any remaining sauce and a bit of chopped parsley. Cheese, beans, corns, lettuce, whatever. Top it however or with whatever you like. What is listed is just what i used in the video. - 1/2 of a lime - 2 roma tomatoes (chopped) - 1/2 yellow onion (chopped) - Small handful of cilantro (chopped) Procedure ——————- - Cut washed chicken breast into 1 inch strips - Put cut chicken in a bowl and add in your seasoning, hot sauce, and buttermilk. Mix until chicken is thoroughly coated. - Cover chicken and allow to marinate in the refrigerator for at least 1-2 hours or overnight - After marinating, remove chicken from the fridge and allow to come to room temperature for 15 minutes. (this just helps cut down the cooking time instead of putting cold chicken into hot oil) - In a separate plate, beat two eggs. Then combine your flour and seasonings in another plate. - Coat chicken in egg mixture, then dredge in the seasoned flour making sure to pack it on nicely to build a nice crust. Shake off excess flour and place coated chicken on a separate plate lined with paper towel (to prevent sticking) or you lay them on a wire rack. Repeat the process until all chicken strips have been coated - Over medium high heat , add in 1 inch of cooking oil and allow to heat. Once heated, carefully drop in you chicken pieces and fry for 2-3 minutes each side and golden brown. Adjust cooking time depending on the thickness of your chicken. Do not over crowd the pan. - Remove cooked chicken from oil and place on a wire rack or a dish lined with paper towels or absorb excess oil. - Add chicken and toppings into you tortilla or taco shell and enjoy! (If you are using tortillas , you can dip them in a mixture of chicken broth and a bit of hot sauce. Then heat then briefly over medium heat before assembling your taco. This will infuse the tortilla with a bit more flavor but this step is optional.
