Just over 250 square feet produce a ton of food! Preserving. Growing the food is only half the battle. Eating fresh from the garden is great, but we also want to preserve our harvests (or farmer's market or grocery store hauls) for later in the year. We can can it. We can freeze it. We can ferment it. To make the salad, season the filet with salt and pepper and sear in a hot skillet for 2-3 minutes per side, or until medium rare. Let the meat rest for a few minutes. Mix the remaining salad ingredients (except the peanuts) in a large bowl and drizzle with dressing until well coated. Home Canned Beef Rogan Josh: Makes 7 24oz jars, 5 quarts or 10 pints 5lbs Trimmed beef, cut into 1" cubes (stew beef, chuck roast, etc) Avocado oil as needed 3c finely diced onions 1/4+c minced fresh garlic 1/4+c minced fresh ginger 6c tomatoes, crushed 4c good quality beef stock 1T sea salt 2T garam masala 2T coriander 2T cumin 2T paprika 1T cinnamon 2tsp turmeric powder 2tsp black pepper 1tsp cayenne (optional) 1tsp ground cloves 1tsp ground cardamom 2 bay leaves 2T molasses Add a small amount of avocado oil to a large pot. Brown beef in small batches on all sides. Set aside in separate bowl. Add diced onions. Stir in salt to help release moisture from the onions, scraping beef drippings from the bottom and sides of the pot. Add garlic and ginger. Saute until onions are translucent and liquid is mostly evaporated. Add garam masala, coriander, cumin, paprika, cinnamon, turmeric, pepper, cayenne, cloves, and cardamom. Stir to toast the spices a bit. Add tomatoes and beef broth. Stir well to combine. Add bay leaves. Simmer 15-20 min to let flavors combine and to cook down a bit. Add molasses. Stir well to combine. Taste test! Add a couple spoonsful to a small dish. Add about a teaspoon of yogurt to the tasting dish. Stir to combine. Taste for seasoning and adjust to suit. Prepare pressure canner, jars and lids. Jars and canner should be hot. Add about a half cup of sauce to each jar to help prevent air pockets. Divide beef cubes evenly among the jars. Top with sauce to a generous 1" headspace. Debubble and adjust headspace as needed. Wipe rims, apply lids and rings. Process 24oz jars and quart jars for 90 minutes at the pressure appropriate for your elevation. Process pints for 75 minutes. Cinnamon Streusel: ½ cup blanched almond flour 1/3 cup allulose 1 1/2 tsp ground cinnamon 1/8 tsp sea salt ¼ cup coconut oil, melted ½ chopped pecans (optional) ----Mix thoroughly and place in fridge while preparing cake batter. Coffee Cake Batter: 3 large eggs, beaten ¼ cup canned full fat coconut milk 1T fresh lemon juice ¼ cup coconut oil, melted 1 tsp liquid maple stevia ¼ cup allulose 1 tsp vanilla ----Mix all ingredients above in medium bowl until smooth. 2 cups blanched almond flour ¼ cup keto baking mix or arrowroot flour ½ tsp baking soda ¼ tsp sea salt 2 tsp ground cinnamon ----Mix dry ingredients until thoroughly combined and lump-free. Add dry ingredients to wet ingredients and stir to combine well. Add half the batter in small dollops into lined cupcake pan. Sprinkle Cinnamon Sugar onto each. Divide remainder of batter among the cupcakes. Retrieve streusel topping from fridge and break up with fork. Spoon onto each cupcake. Bake 23-25 minutes. Let cool in pan 20 minutes. Flip beef over and repeat browning process on all sides. Repeat with remainder of beef until all beef has been browned. Remove beef and set aside. Add onions and salt to pan. Let onions sweat while scraping brown bits from the bottom and sides of the pan. Add carrots, celery. Cook over low for 10 minutes. Add garlic and stir. Add tomato paste and stir to incorporate, cooking for 2-3 minutes. Add red wine. Stir to incorporate, scraping the bottom and sides of pan as needed. Let simmer 5-7 minutes to reduce gently. Add tomato puree, beef stock, herbs, pepper, cooked pancetta. Stir to incorporate. Simmer 10 minutes. Taste for seasoning, adding salt to taste. Remove bay leaves prior to jarring. Fill the clean and warmed jars: Add about a half cup of sauce to the bottom of each jar. Divide meat evenly among the jars. Top with sauce to a generous 1" headspace. Debubble. Adjust head space as needed. Wipe rims clean. Add lids and rings to finger-tight. Add jars to warmed pressure canner. Process pints for 75 minutes at the appropriate pounds of pressure for your elevation. Process quarts and 24oz jars for 90 minutes at the appropriate pounds of pressure for your elevation. To serve: Prepare pasta according to package directions for "al dente". Pappardelle is the traditional favorite, but use what you have. Drain pasta and keep warm. Pour jar of Beef Ragu in pan on medium heat, gently breaking up beef cubes. Stir to disperse beef. Add drained pasta and toss with beef and sauce. Let simmer 2-3 minutes until heated through. Serve. For each 2 pounds of cabbage, I use 1 Tablespoon of salt. Weigh cabbage. Note how much salt you will need for this amount of cabbage. Remove any damaged outer leaves. Reserve 1-2 intact leaves for topping the kraut in the jar. Shred, dice or chop cabbage. Sprinkle on salt and mix in thoroughly. Let rest for 30-60 minutes. Massage the cabbage (squeeze and turn over) for several minutes to help the cabbage break down and create its own brine. Let rest again for 15 minutes or so. Once the cabbage volume has reduced to approximately 1/3 of its original volume, it is ready to pack into jars. One quart jar will hold approximately 2lbs of cabbage, well-packed. Use your fist or a kraut pounder to create sufficient brine as you pack the cabbage into the jar. Leave sufficient room for covering cabbage leaves and fermentation weight. Tuck cover leaves under shoulders of the jar to keep them in place. Top with weight and push down to check that brine tops the weight. Remove any floating pieces of cabbage or herbs (if used). Add pickle pipe and jar ring or use a loose-fitting lid so air can escape but nothing can get in. Set on a plate or towel and place in a spot where it can remain undisturbed for 3-4 weeks. Be sure to note the date you started the kraut and when it might be done. Generally speaking, a plain kraut will be finished in about 21-30 days. Start tasting at 21. It is done when it tastes good to you. When finished, remove the weight. Welcome to Grow and Preserve. I'm Carter, and I'm thrilled you're here. We cover several topics here. I hope you'll join the conversation so we can all learn from each other.

Gardening, specifically growing food. I have a tiny suburban lot with 8 raised beds and a few barrels and pots. Just over 250 square feet produce a ton of food!

Preserving. Growing the food is only half the battle. Eating fresh from the garden is great, but we also want to preserve our harvests (or farmer's market or grocery store hauls) for later in the year. We can can it. We can freeze it. We can ferment it. We can dehydrate it. We'll do all of that together.

Building a Well Stocked Pantry. How many meals can you make from your pantry (including fridge and freezer) right now? How long will this last you? If the power goes out, can you still keep your food fresh? Can you still cook your food? A deep and broad working pantry can make your life so much easier. Let's stock our pantries together!
