An old friend gave me this marinade recipe years ago so I don’t know where it came from but it’s simple to throw together and is always delish! Try doubling it and putting some in the freezer for later… Marinade for family size chicken thighs: - 1/8 cup lemon juice - 1/2 cup brown sugar (or maple syrup) - 2 tsp Dijon mustard - 1 tsp black pepper - 2 tsp garlic powder - 1/2 cup olive oil - 1/2 cup balsamic vinegar - 1/4 cup soy sauce (or coconut aminos) - 1/4 cup Worcestershire sauce Marinate in fridge for a few hours or overnight and grill. Pair with potatoes (we like to “bake” ours in the Instant Pot) and your fav veggie! One of the reasons I like this meal so much is I can make a lot of chicken at a time and prep the marinade the day before so it makes prepping much quicker the next day.
