Fire-up the wood-burning historic cookstove & cook with us as we keep the fire going ALL day, & enjoy the slow life in a Montana cabin. This is the first episode in our "Pioneer Skills" series where we will feature experiences & cooking (often with tools circa the late 1800s) in a renovated 1889 Montana homestead cabin.   Join the channel to explore just what survival was like as a pioneer on the Western prairie. Pumpkin Pie Recipe: Found in "Laura Ingalls Wilder: "Little House In The Big Woods"" "Ma put the cubes into the big iron pot on the stove, poured in some water, and then watched while the pumpkin slowly boiled down, and the pumpkin must never burn. Laura stood on a chair and watched the pumpkin for Ma, and stirred it with a wooden paddle. She held the paddle in both hands and stirred carefully, because if the pumpkin burned there wouldn't be any pumpkin pies." Pie Filling (our version) 2 eggs, 2 cups of stewed pumpkin 2/3 cup sugar splash of milk or half-and-half pinch of spices: cinnamon, ginger, nutmeg Bake into a lard pie crust (homemade) at 425 degrees for 10 minutes and 350 degrees for a further 25 minutes. </video> <video> Pioneer Candles: TALLOW Made Over An Open Fire Description: How did people light their houses not that long ago? Seriously, just 150 years ago it was a choice of candles or oil lanterns. Oil you had to buy, but candles you could make--either from your bees or more likely from your cow. It took knowledge, and it took long hours of work. Today we make candles using materials from the land: beeswax & home-rendered tallow. If you've never seen tallow before, you are not alone... this stuff is straight from the archives of history. It's an honest, simple, and outdoor-made material that can be rendered right over the campfire. We will make 3 different types of candles as we explore the knowledge and work it took to get by as a pioneer in the American West, not all that long ago. We've spent a full year making this series, The 1889 Project. And today, it ends with 5 tons of stone, pulled from the fields surrounding this homestead house, to make a massive set of front entry steps. We will use NO mortar, NO cement or foundation--only fieldstones & ancient knowledge of how people from the past learned to lay rocks.   By the end of today, we will have re-learned the art of cooking with wood & fire on an early 1900s wood-burning cookstove. We will have friends join us to teach these lost ways. And we'll use modern technology to solve some old-school problems. American cornmeal scones are on the menu: made from home-grown corn & stone ground here in the cabin. We use homemade butter & time-intensive ingredients, as we fire up the cookstove to bake THE BEST SCONES we have ever had. But first, we fail miserably at baking bread in this oven for the first time. Historical tools are not easy.  American Cornmeal Scone Recipe: 1 1/2 cups white flour 1/2c cornmeal (stone ground) 2 TBS white organic sugar 2TBS brown sugar 1 1/2 tsp baking powder 1/4tsp baking soda 1/2tsp salt 1/3 cup cold butter (homemade) 1/2 cup buttermilk 1 egg **Bake at 425 degrees for 10 minutes. It's gorgeous, strong, and in need of a home. We are nearly at the end of a YEAR long renovation--Today, we put heat & a place to cook back into this old pioneer house. The early 1900s wood-fired cookstove goes into the house & we heat it up for the first time, as we celebrate by candlelight. Tonight will be like no other! (Oh yeah, the cookstove throws us an exploding curveball that evening)  We'll make beeswax candles, light them on a cake, and get a big pot of chili cooking on a raging fire in the cookstove. Oh! Plus, come along as we decorate with friends all throughout the interior of this cabin--pewter, cast iron, & all the pioneer tools you'd expect in an 1800s homestead. This 1889 historic house is abandoned no longer. My little girl & I are firing up the old wood-burning cookstove for an all day marathon of making historic recipes. 3 old classics: cowboy coffee (with eggshells), rudimentary hot cocoa, and a Dutch baby pancake (no leavening). When the firewood is chopped, the coffee brewed, the food cooked, and the dishes washed (sans running water), we will be proud that today was no "soft-living" day--it took muscle, grit, & the will to march on through the cold, snowy hours. Merry Christmas & Happy New Year to you! Cowboy Coffee: 4 heaping TBS coarse ground coffee 3 cups of water 1 eggshell, washed *Boil all together for a minimum 20 minutes. Dutch Baby: 3 eggs, whipped until light 1 cup whole milk splash of vanilla 1 cup of flour 1TBS sugar 1/2 tsp salt 2 TBS bacon grease 2 TBS butter *Heat cast iron skillet in the oven until hot at aprox 425 degrees. Add butter and bacon grease to skillet. Pour in batter that has been whipped for 5 minutes straight, then rested for 25 min (to let the flour absorb the liquids). Bake at 425 for 8 min, reduce heat to 350 & bake for another 15 min.
