With the new year in full swing, there’s no better time to try something new! Last week I went over a brown sugar cinnamon syrup and today we’re making spiced caramel. Full Recipe: - 1 cup sugar (brown) - 1/4 cup water - 3/4 cup heavy cream - 2 tbsp unsalted butter - 1 tsp sea salt Spices (optional, but very tasty IMO) - 1 tsp ground cinnamon - 1/2 tsp nutmeg - 1/2 tsp cloves - A tiny pitch of black pepper Instructions: 1. Melt sugar & water over medium heat until golden. Then add the cinnamon sticks and simmer for 10 minutes 2. Carefully add cream & butter, stirring continuously. 3. Add spices & salt. 4. To make the syrup, simmer the following over medium heat: - 1 cup brown sugar - 1 cup water - 3 cinnamon sticks - 1/8 teaspoon of salt After 10-15 minutes of simmering, turn off the heat and add about 1/8 teaspoon of vanilla extract.
