Katie & Chris Music: The World In Our Arms/Jon Algar/Courtesy of www.epidemicsound.com The Daydreamer/Eric Feinberg/Courtesy of www.epidemicsound.com Ball Dill Pickle Recipe: Ingredients: 4 pounds (3- to 5-inch) pickling cucumbers 1 gallon plus 1 quart water 10 tablespoons Ball® Salt for Pickling and Preserving 3 cups white vinegar (5% acidity) 2 tablespoons sugar 1 tablespoon pickling spice 12 dill sprigs 2 tablespoons mustard seeds Ball® Pickle Crisp® Granules (optional) Preparation: 1 Rinse the cucumbers under cold running water, and trim any that are longer than 5 inches so that they’ll fit comfortably in the jar. Cut each cucumber lengthwise into quarters. Place the spears in a large, clean container (such as a 12- to 18-quart food-safe plastic pail or basin). Combine 1 gallon of the water and 6 tablespoons of the salt in a large pitcher, stirring until the salt dissolves. Pour over the cucumbers; cover and let stand at room temperature 24 hours. Drain; rinse under cold running water, and drain. 2 Combine remaining 1 quart water, vinegar, next 2 ingredients, and remaining 1⁄4 cup salt in a stainless-steel or enameled saucepan. Bring to a boil, stirring until the salt and sugar dissolve. 3 Place 2 of the dill sprigs and 1 teaspoon of the mustard seeds into a hot jar, and pack tightly with the cucumber spears. Ladle the hot pickling liquid over the spears, leaving 1⁄2-inch headspace. Add 1⁄8 teaspoon Ball® Pickle Crisp® Granules to jar, if desired. Remove air bubbles. Wipe the jar rim. Center the lid on the jar. Apply the band, and adjust to fingertip-tight. Place the jar in the boiling water canner. Repeat until all the jars are filled. 4 Process the jars 10 minutes, adjusting for altitude. Turn off heat; remove the lid, and let the jars stand 5 minutes. Remove the jars and cool. Turn down to a simmer and reduce down to 50% (30-40 minutes). Stir in lemon juice and pectin. Boil 1 minute then add sugar. Boil for another 2 to 3 minutes. Add to sterilized/heated jars leaving 1/4 inch headspace. Secure lids to finger-tight and add to water bath canner. Boil for approximately 10 minutes. Remove and let set, undisturbed for 24 hours. Add water and lemon juice, and bring to a boil. Boil for 8 minutes. Strain "fireweed tea" into a container. Discard flowers. Bring fireweed tea back to a boil and add powdered pectin. While boiling, add 1 cup of sugar at a time until all 5 cups are added. Boil for 1 minute. Turn off heat. Ladle into clean, jelly jars, close finger-tight, add to water bath canner and boil for approximately 10 minutes. You can also use a dehydrator. During drying, stir 2 to 3 times a day. Store in glass jars. Does not need to be refrigerated. Keep out of direct sun to preserve color. Because of the water and salmon, we used our GoPro instead of our usual camera and microphone. We don’t have a mic mod for the GoPro so, unfortunately, sound quality suffers. Thank you for supporting our channel! -Katie & Chris Free Mind/Wildflowers/Courtesy of www.epidemicsound.com Recipe in video: Thai Chili Sauce 1 Cup (250 g) water 1 Cup (238 g) rice vinegar ¾ Cup (150 g) granulated sugar (we used Sugar in the Raw) 2 teaspoons tomato paste 1 habanero pepper, finely diced (about 2 teaspoons) 2 teaspoons fresh ginger root, minced 1 teaspoon garlic, minced Slurry 1 tablespoon cornstarch 1 tablespoon water In a medium saucepan over medium-high heat, add water and vinegar. Add sugar, tomato paste, chili (habanero) pepper, ginger, and garlic. Stirring frequently, boil for 10 minutes, or until the sugar is fully dissolved. In a small dish, combine cornstarch and water to create a slurry. Stir together until no clumps remain. Pour the slurry into the saucepan and stir to combine. Continue to cook the sauce, stirring occasionally, for about 8-10 minutes. The mixture will thicken slightly and should coat the back of a spoon. (Don’t worry if the mixture is still somewhat thin; it will continue to thicken as it cools.) Remove from heat and allow the mixture to cool. If you feel like it is too thick after cooling, whisk in ½ teaspoon of water to thin it out as desired. It can also be thinned by warming the sauce slightly in the microwave at 20-30-second intervals, stirring in between. Sweet Chili Sauce - I Am Homesteader Preparing the Salmon Remove skin from the salmon and cut it into bite-sized pieces. Pour ½ of the chili sauce onto the salmon and air fry for approximately 5 minutes. Flip the salmon and cook for about 5 more minutes or until the internal temperature reaches 145 degrees Fahrenheit. Serve over rice and additional chili sauce.
