It’s SO EASY! Royal Icing Recipe A super easy royal icing recipe that dries shiny and not too crunchy! Perfect for decorating cut-out cookies. Ingredients: 5 Tbsp Meringue Powder (Chef Master, Wilton or Satin Ice) ¾ Cup Water (room temperature or warm) 2 lbs Powdered Sugar 2 tsp Clear Vanilla Extract (Watkins is my fave) 2-3 Tbsp Light Corn Syrup Instructions: 1. Add the meringue powder to the bowl of a stand mixer fitted with the whisk attachment. Pour the water over the powder. Mix on medium speed until frothy, ensuring there are no lumps. Scrape down the sides of the bowl as needed. 2. Switch to the paddle attachment and gradually add the powdered sugar, mixing on low speed until fully incorporated. Continue scraping the bowl as needed. 3. Pour in the clear vanilla extract and corn syrup. Mix on medium speed until the mixture becomes thick, glossy, and smooth. The icing will initially be at a thick piping consistency. 4. To color, divide into bowls and use gel-based food coloring to tint the icing. For vibrant white, mix in a touch of white food color gel. 5. To adjust for flooding, add water a little at a time, mixing thoroughly between additions. Test it by running a knife through it and observing how quickly it smooths out (10-15 seconds is ideal for flooding). 6. Always keep the icing covered with plastic wrap to prevent it from crusting. If you’re not using it immediately, store in an airtight container at room temperature.
