Hi, my name is Ashton and I am the cook and owner of The Low Sodium Queen. In 2012-2013 I was diagnosed with a very chronic and terminal illness called Idiopathic Pulmonary Arterial Hypertension. I never had issues with a lot of sodium until recently in 2019 when I was hospitalized with the flu and it caused a little bit of damage to my heart.
Now in 2021, starting in January I begun a journey of recooking food and everything I learned and re-learning it but, without salt or as little salt as I can. I was put on a 2,000mg limit of sodium a day and i've tried my hardest to stay under the level. This year, I want to do better. I have purchased books and made a choice to be lower sodium in my life. Am I 100% strict? No. I enjoy some salty things here and there... but, never ALL THE TIME.
